In implementing this pre rigor and pin bone out programme, The Scottish Salmon Company delivers a product of optimal freshness, quality, colour and taste. By cutting the fillets within hours of harvest, the product’s shelf life is also maximised; all of which is compliant with the latest industry standards of temperature and hygiene control.
This programme also provides the flexibility to select the size of fillets, which can be trimmed to meet customer specification, ensuring that we continue to meet the individual requirements of our customers.
