Sizzling Scottish Salmon Kebabs

These Scottish salmon skewers are so yummy and versatile.  You can make them all year long; cook them on the grill, on the stove top, or in the oven.  The beautiful colours of the salmon and vegetables side by side make each one look like a rainbow - they're almost to pretty to eat!


  1. Cut the peppers into 1 ½ inch square pieces.  Cut the red onion into similar sized chunks and separate the layers.
  2. Thread the skewers alternatively with the onions and peppers, and then the salmon.  Leave some room at the base so you can handle them easily.
  3. Brush the skewers liberally on both sides with olive oil, and sprinkle with salt and fresh ground black pepper.  Cook on a hot grill, turning once, until the salmon is cooked through and the veggies have softened.
  4. Serve with a squeeze of lemon on top and a green salad.


  • 400g Scottish salmon, cut into chunks
  • 1 red pepper
  • 1 orange pepper
  • 1 yellow pepper
  • 1 green peeper
  • ½ red onion
  • Olive oil
  • Salt
  • Freshly ground black pepper

To serve

  • 1 lemon
  • Green salad
